Lance Hedrick's One and Done uses 2 count blooms and 1 count final pour, with grind selected by drawdown rather than grinder clicks. Designed to tolerate grinders, filters, and roasts, it yields a balanced, forgiving cup.

Notes

Dial for a total drawdown of 120-150s and leave both blooms unswirled so slow filters do not clog. Differences in hardware can shift timing by 30-40s. If drainage is too fast, a small swirl after the main pour can add about 10-15s; otherwise correct with grind first.
