AeroPress

Zuppa Lunga

Lance Hedrick's diluted "Zuppa" technique adapted to the AeroPress with a portafilter attachment. A 1:10 ratio with coarser grind delivers the syrupy, high-TDS character of a Zuppa in a longer, sippable cup.

You'll need

  • AeroPress valve cap Required

A valved cap that replaces the AeroPress stock cap to stop dripping, hold water for longer steeps, or build back-pressure for espresso-style shots. Common models: AeroPress Flow Control Filter Cap, Fellow Prismo, Joe Presso (for a true espresso shot, the Prismo’s pressure valve).

Recommended AeroPress Flow Control Filter Cap · Fellow Prismo · Joe Presso

Notes

Requires a portafilter attachment with a built-in shower screen — Joe Presso, Fellow Prismo, or AeroPress Flow Control. A stock AeroPress will not work: the kettle stream hits the puck too hard, and liquid escapes the gasket during the press. Joe Presso is Hedrick's preferred option — its sealed shower screen prevents the bypass that Prismo's edge slots can cause. Smaller dose (15g) than the OXO version (22g) because the 51 mm basket is narrower than the OXO's 62 mm. Same 1:10 ratio. Tamp the puck just like espresso. A paper filter on top is optional — the shower screen alone is usually enough. Pour, give the brewer a couple of taps to release bubbles, then slow press. Stop just before the hiss for cleaner cup, or push through for full yield. Yield lands around ~131g, TDS near 2.0, extraction near 17% — slightly thinner body than the OXO version, but a more pronounced acidity pop.
