Lance Hedrick's "one and done" recipe: a 1:15 ratio with a double bloom and one final pour, designed to be forgiving across any grinder, filter or roast. The grind is dialed by drawdown time, not by a recommended click.

    Drawdown complete. Target window 2:00–2:30.

Notes

Dial the grind so total brew time lands between 2:00 and 2:30. Match the drawdown, not a target click — different grinders and filters can shift it by 30–40 seconds. The double bloom releases trapped CO₂ before the main pour, preventing channels from rising bubbles during the final extraction. No swirling on the blooms — it slows flow, especially with slow filters like the Hario Tabi. If the brew draws too fast (under 2:00), give one small swirl right after the main pour to slow drawdown by 10–15 seconds. Ratio is the second knob to play with: 1:16 (240g water) or 1:17 (255g) for less concentration; 1:13 for more strength and intensity. Target TDS around 1.3, extraction near 18.5–19%.
