    Pour 36g slowly. Wait 40 seconds for bloom.

    Pour 64g gently to 100g. Wait 20 seconds.

    Pour 50g to 150g. Wait 20 seconds.

    Remove dripper before complete drawdown. Yields approximately ~165ml concentrated coffee.

Notes

Specifically for medium-dark to dark roasts. The coarse grind with low 1:10.5 ratio produces an intense, concentrated cup reminiscent of Japanese kissaten coffee. Remove dripper before full drawdown to prevent harsh astringency. The internal step ribs hold water to express full body.
