Greek Style (Sketos)

Ibrik / Cezve Traditional by Gota Team

Based on Greece's traditional sketos service, this unsweetened ibrik recipe lets coffee provide all the intensity. Its goal is a compact, strong cup with persistent foam, firm bitterness, and an unmasked roasted aroma.

Notes

Start with cold water and extra-fine coffee, stir only while the slurry is cold, and use a narrow flame that stays beneath the vessel. For metrios add 1 tsp sugar; for glykos use 2 tsp, dissolving it before heating.
