Before you brew

  1. 1 Unscrew the pump and coffee basket from the water chamber.
  2. 2 Set a paper filter in the basket.
  3. 3 Add 22g of grounds.
  4. 4 Tamp the coffee firmly and evenly to the marked fill line.
  5. 5 Lay a second paper filter flat on top of the grounds.
  6. 6 Screw the coffee basket onto the bottom of the water chamber, then set the assembly on the carafe.

    Fill the chamber gently.

    Screw the pump tightly onto the top of the water chamber.

    Push the handle down and twist it a quarter-turn to unlock the pump.

    Press slowly and gently until the coffee bed is fully saturated.

    Pump firmly and evenly 8–10 times, stopping when the concentrate no longer comes through.

Notes

Place one paper below the coffee and another above it to keep the puck flat against the shower screen. Use boiling water and a fine grind; go finer if the press offers little resistance, or coarser if it nearly stalls. Press firmly and evenly for about ~60g of concentrate, then serve neat or dilute with hot water or milk.
