Before you brew

  1. 1 Set a paper filter in the basket.

Notes

Grind finer than for pour-over and press slowly, using the basket's resistance as a dial-in cue. Stop at the first hiss for a cleaner finish or continue for fuller body. Expect roughly 120g of concentrate; dilute to taste with hot water or milk, or press and dilute over ice.
