Notes

Preheat aggressively and brew with 96°C water so the slurry does not lose needed energy. Start slightly finer than your medium-roast setting and watch the finish: a fast drain with sharp acidity calls for a finer grind, while a stalled bed or astringency calls for less agitation or a coarser setting.
