Before you brew

  1. 1 Rinse the filter.
  2. 2 Add 15g of coffee and level the bed with a WDT tool.
  3. 3 Fit the dispersion screen over the bed.

    Pour 142g in concentric rings to 187g. Pour through the dispersion screen. Keep the pour gentle.

    Wait until the water is close to the coffee bed without exposing it. Pour the final 143g in concentric rings to 330g. Pour through the dispersion screen. Keep the pour gentle.

Notes

Pre-wet the paper and use only blunt, fine WDT needles so the filter is not punctured. Pour through the dispersion disc, swirl just enough to level after each addition, and treat a brew beyond 10 min as stalled. For darker coffee, reduce heat and consider omitting the final pour.
