Notes

For washed Africans like Yirgacheffe: water at 94°C, fine grind around 20 clicks Comandante C40. Spiral - center - spiral: the middle pour to the center compacts the bed and prevents side channeling. Short, clean bloom: 50g is 20% of total water. Ratio 1:17 — light, floral cup that doesn't saturate the filter.
