Jia Ning Du's winning 2019 World Brewers Cup recipe is presented here for the Origami S. It skips a separate bloom and uses three increasingly large, assertive pours to drive a rapid extraction with brightness and clean definition.

Notes

Begin the first pour immediately and keep all grounds moving, since there is no isolated bloom to correct dry pockets. Increase each pour's volume while preserving a stable stream and level bed. If the fast drawdown tastes hollow, grind finer; reduce pour force if the finish turns rough.
