Notes

Around 22 clicks Comandante C40, BWT-filtered water at 93°C. Bloom of 50g for the full 30 seconds — let the gas escape before the first main pour. Two main pours of 100g each at the same pace. With a good abacá paper (Cafec) the bed never stalls. Total brew time around 3:15. If it runs faster, grind a click finer next time; if it stalls past 3:30, a click coarser. This is the starting point — taste it, then tune grind or temperature for the specific coffee.
