Notes

Start coarse and move finer only until sweetness and balance appear. Fully wet the bed during the bloom so later water does not bypass under-extracted grounds. Press for about 1 min with little more than hand weight, and keep even light roasts below 95°C if bitterness rises. A Melodrip can soften the bloom stream.
