    Pour 50g in the center, then give the dripper a gentle spin.

Notes

Hedrick's streamlined approach uses spins instead of swirls for agitation. The two smaller pours at the start saturate evenly, then two larger pours do the bulk of the extraction. Target finish around 3:00. Dose range: this same recipe scales linearly from 15g (255g water) to 25g (425g water) at the same 1:17 ratio. Outside that range, you'll likely need a grind tweak or an extra pulse. To lower extraction (darker roasts): let the kettle sit off-boil for 30–50 s before pouring — drops the slurry temp without changing technique. To raise extraction: divide the final water into three pours instead of two. The extra agitation pulse pushes you to the higher end of Hedrick's typical 20–23% range. Plastic V60 is best for heat retention; if you brew on glass/ceramic/metal, preheat aggressively. Use a chopstick / pen / grinder brush to gently spiral a divot into the dry bed before brewing — circle from outside in with as little compression as possible. Avoid pressing with a finger (it pre-tamps the bed).
