The Phoenix70 is Saint Anthony Industries' flagship pour-over: a minimalist composite framework whose only job is to hold a dual-wall conical paper filter at a 70-degree angle. Together the frame and filter form the brew column. At ten degrees steeper than a standard 60-degree cone, the dry coffee bed sits about a third taller — roughly 3 inches with a 24 g dose — so water has to travel further through the grounds.
That tall column does double duty: as water drains, fines are carried downward and trapped in the deep bed, so the column itself acts as a second filter. The result is a notably clean, high-clarity cup with extraction on the higher side. The house recipe is a 1:16 at water just off the boil, poured 50 g every 30 seconds to a roughly four-minute drawdown; grind finer if it runs fast, coarser if it stalls.
