    Bloom

    Pre-heat nel filter with hot water. Add 25g of coarse coffee in a loose mound. Groom with a paddle. Create a small indentation at the top. Pour 45g very slowly around the indentation.

    Pause for 20 seconds. Let the bloom settle and gases escape.

    Pour

    Second pour: 80g of water over 60 seconds in a spiraling pattern. Avoid the edges of the filter.

    Third pour: 60g of water over 30 seconds. Maintain the same spiral pattern.

    Final pause. Allow remaining water to draw through.

    Total brew time 3:20. The result is a mellow, full-bodied brew with a silky mouthfeel.

Notes

Source: Blue Bottle Coffee (bluebottlecoffee.com). Grind to a French press consistency. Water should cool to 79.4-82.2°C (79-82°C) before brewing. Create a small indentation at the top of the coffee mound the size of a nickel. The first pour should be extremely slow: 45g over 45 seconds. Groom the grounds with a bamboo paddle before pouring.
