Method

Pour 60g of water slowly. Let bloom for 30 seconds.

Spiral from center to edge and back. Pour to 150g.

1:00Pour
Continue spiraling. Pour to 250g.

1:30Pour
Final pour to 350g. Gently swirl dripper.

3:00Done
Drawdown complete. Expect a rich, bold cup.

Notes
Originally based on Blue Bottle's early cafe dosing. The finer grind and higher dose create a more espresso-like concentration. Uses Kalita Wave 185 filter. Pour rate should be about 10g/s.
