    Pour

    Open switch. Pour 60g of water at 93°C ensuring even saturation. Let drain for 30 seconds.

    +60g 10s Circular

    Pour

    Pour another 60g. Let drain for 45 seconds.

    +120g 10s Circular

    Pour

    Close switch. Cool kettle water to 70°C. Pour 160g of 70°C water.

    +280g 15s Slow
  4. 1:45
    Wait

    Open switch after 30 seconds of immersion. Full drawdown.

  5. 3:00
    Done

    Brew complete.

Notes

The first two open-switch pours extract sweet and acidic flavors through percolation. The final closed-switch immersion at lower temperature adds body without harsh compounds. Adjust grind to hit 3 minute total brew time.
