    Pour to 80g in 10 seconds, kettle close. Quick swirl after to settle the bed.

    Pour to 200g in 12 seconds, energetic circles into the corners.

Notes

The whole brew is built around momentum. Don't drag the pours: each shot is meant to land in 10–12 seconds with the kettle close to the bed. A medium-coarse grind keeps the drawdown moving between pours. If the level drops too slowly, coarsen one notch — the next pour needs an empty stage to land on. Final time around 3:00 is the target. If you push past 3:30, agitation between pours has gone soft.
