    Open the valve. Pour to 45g — about 3× the dose. At the first drips, close the valve and swirl.

    90s Pulse Valve: Open

    Open the valve fully. Pour in the centre of the cap in multiple pours, keeping the water column under 1 cm above the bed, until 255g.

Notes

Pour near-boiling water, 97-98°C. Pour into the centre of the cap in multiple small additions. Keep the brew water column less than 1 cm above the bed throughout.
