    Place filter, insert barrel, close valve. Pour 60g of water first (4× dose). Add the coffee and WWDT aggressively to saturate as fast as possible. Place the dispersion cap and tare.

    Add to 105g (3× dose). If the flow stalls, close the valve and WWDT down against the paper.

    Add the remaining water to 255g (10× dose).

Notes

Pour at 92°C or a little higher. Pours reference the dose: 60g is 4×, 45g is 3×, the last 150g is 10×. If the flow stalls or slows, close the valve and WWDT down against the paper.
