Notes

Open the valve to 1 o'clock for the main pour. It percolates fast at this grind — use the valve to slow the flow as needed. Produces a clean cup with good flavour separation. A metal filter gives a more bodied cup with this recipe. For anaerobic, decaf or darker roasts, drop to 85°C and/or tighten to 1:11.
