    Close valve. Pour to 100g.

    Valve: Closed

    WWDT to settle the majority of the bed onto the filter.

    +250g add
    90s Pulse Valve: Open

    Open the valve to "1 o'clock". Pulse pour, keeping the water column mid-way up the barrel or above, until 350g.

  4. Done 4 / 4
    4:00

    Drawdown complete around 4:00–4:30. Add 100g hot water to the carafe to dilute.

Notes

It percolates fast at this grind — use the valve to slow the flow as needed. Produces a clean cup with good flavour separation. A metal filter gives a more bodied cup with this recipe. For anaerobic, decaf or darker roasts, drop to 85°C and/or tighten to 1:11.
