    Closed valve, dry filter. Pour to 25g.

    +75g add
    15s Circular Valve: Open

    Open the valve. Add the remaining water to 100g over the next 15 seconds.

  3. Wait 3 / 5

    Valve: Closed

    When the draw-down completes, close the valve and pour the brewed coffee back over the bed once, without emptying the grounds.

  4. Wait 4 / 5

    Valve: Open

    Place the Mini on the empty carafe, open the valve and let it drain.

    Drawdown complete around 3:45–4:00.

Notes

Especially good with high-density washed coffees, and expressive anaerobic or thermal-shock processed coffees. Produces a cleaner, more delicate cup with better flavour separation and higher perceived clarity. Expect a lower TDS, around 1.05–1.25%.
