Kurasu Kyoto nel drip recipe optimized for light roast coffee. Developed by head barista Tsubasa after over 50 tests for sweet, rich texture.

Method

0:00 01Bloom
Rinse and squeeze nel filter. Add 20g of coffee. Pour hot water in circular motion over the entire coffee bed to bloom. Use about 40g.
To 40g 10s Circular -
0:30 02Pour
Continue pouring until coffee steadily drips into the server. Switch to center-pour and maintain an even level on the coffee bed.
To 160g 60s Slow -
1:30 03Wait
Once coffee drips down, extraction is complete. Do not over-extract.

Adjust taste and concentration with remaining hot water from the kettle (up to 208g total). Serve immediately.
