    Bloom

    Rinse and squeeze nel filter. Add 20g of coffee. Pour hot water in circular motion over the entire coffee bed to bloom. Use about 40g.

    Pour

    Continue pouring until coffee steadily drips into the server. Switch to center-pour and maintain an even level on the coffee bed.

    Wait

    Once coffee drips down, extraction is complete. Do not over-extract.

    Done

    Adjust taste and concentration with remaining hot water from the kettle (up to 208g total). Serve immediately.

Notes

Source: Kurasu Kyoto, head barista Tsubasa (kurasu.kyoto). This recipe was refined through over 50 tests specifically for light roast coffees. Rinse the nel filter with hot water and squeeze tight once cooled, then additionally remove moisture with a clean towel. The final step adjusts concentration with remaining hot water from the kettle.
