Notes

Grind finer than for a full-strength pour-over and saturate carefully so the small water charge reaches the entire triangular bed. Dilute only after tasting the concentrate, adding hot water for an Americano-like cup or ice for a chilled drink. If it is harsh before dilution, coarsen rather than shortening the brew.
