Method

    Pour

    Upright: add the 30g coarse base, then pour 100g of 80°C water in 15 seconds.

    To 100g 15s Slow
  2. 0:15 02
    Stir

    Stir for 15 seconds.

  3. 0:30 03
    Pour

    Add 70g more water (total 170g).

    To 170g 5s Slow
  4. 0:35 04
    Wait

    Sprinkle the 1g pinch of espresso-fine grounds on top.

    Wait

    Cap with two hot-rinsed paper filters, lift the brewer and invert onto the cup.

  6. 0:45 06
    Press

    Press for 45 seconds.

  7. 1:30 07
    Done

    Top with 50g of hot water and serve.

Notes

Cap with two paper filters, hot-rinsed. Brews upright, then "flip" means lift and invert onto the cup before pressing. Final dilution: 50g of hot water after the press.
