    Pour

    Pour 50g of water quickly and stir lightly.

    To 50g 8s Circular

    Wait

    Seat the plunger about 1 cm to prevent dripping. Wait until 0:30.

  3. 0:30 03
    Pour

    Remove the plunger and pour the remaining 150g of water (total 200g).

    To 200g 15s Slow
  4. 0:45 04
    Wait

    Re-seat the plunger and wait until 1:30.

  5. 1:30 05
    Press

    Press slowly until the hiss.

  6. 2:00 06
    Done

    Brew complete (~2:00 total).

Notes

Standard position with a rinsed paper filter. Seat the plunger after the bloom to hold the slurry under vacuum. Target a light, juicy cup with low bitterness and bright acidity.

Grinder

Medium-coarse — about 25–27 clicks on a Comandante.
