Notes

Use water right off the boil and a grind between powdered sugar and salt — coarser than espresso, finer than drip. Preheat and invert the AeroPress with the plunger pushed in about one mark. Add 100g of hot water to stretch it into an americano, or pour the concentrate over ice.
