Method

0:00Pour
Pour 50g of water slowly over 5-6 seconds onto the grounds.
+50g 6s slow -
0:30Pour
Bloom complete. Pour another 50g of water. Stir gently in cross pattern for 10 seconds.
+100g 10s slow -
1:30Swirl
Swirl chamber gently. Flip onto cup.

Press gently and steadily for 30 seconds.

Add 100g warm bypass water to the concentrate. Stir once and serve.

Notes
Adapted from George Stanica's 2024 WAC winning technique. Brew 100g concentrate then dilute with 100g bypass water. The bypass approach produces a cleaner, sweeter cup than brewing at full volume. Use the best light-roast single-origin available. Stir in N-S-E-W pattern, not circles.
