Stir-Only
by Hatakeyama Daiki for Hario V60 NEO 02 original source (beanbook.app)
Champion Daiki Hatakeyama's Neo and Switch method reverses normal pour-over order: water enters first, then coffee is stirred into full immersion. It removes pouring technique from the equation for a fast, even, vivid cup.
Before you start
You need
- Hario V60 NEO 02
- Hario Switch (immersion base) Hario Switch
- Cafec Abaca T-92 An abaca paper — Cafec's T-92 — drains fast enough for the stir-only immersion to release cleanly on the V60 Neo cone. Or use Able Kone Mini (V60) · Barista Warrior Reusable Metal (cone) · Cafec Abaca T-83 · Cafec Abaca T-90
- Scale
- Water at 100 °C (212 °F)
Notes from Hatakeyama Daiki
Fit an Abaca paper and keep the Switch closed while loading. Add 150g (5.3 oz) before 13g (0.5 oz), then use 100°C (212°F) water and two gentle, complete stirs to wet every particle without grinding fines into the filter; open promptly after the second stir.

- Done before 0:55? Grind finer
- Bitter or dry? Coarser, or cooler water
- Sour and thin? Grind finer
