Notes

Preheat the Bloom and use 96°C water to preserve energy through the drawdown. Begin finer than for a developed roast, but keep agitation measured because migrated fines can mute clarity. Sourness with a fast drain suggests going finer; dryness or a slow finish suggests coarsening.
