    10s Slow Valve: Closed

    Close valve, place filter, wet the filter and drain the base, close valve, insert barrel, add and level coffee, place dispersion cap, tare. Pour 75g (3× dose). Light WWDT, then open the valve to drain the bloom.

    250g

    +175g add
    20s Circular Valve: Closed

    Close the valve. Pour to 250g. Light swirl, then open the valve to about 1 o'clock.

  3. Pour 3 / 4
    1:30

    To

    350g

    +100g add
    20s Circular Valve: Closed

    When the slurry falls to about 140ml, close the valve. Pour to 350g. Light swirl, then open the valve to the same position.

  4. Done 4 / 4
    3:45

    Drawdown around 3:45. Add 75g water to dilute, give or take to taste.

Notes

Adjust the final dilution up or down to taste. Should yield about 375g in the cup.

Grinder

600 µm burr gap; grind a touch finer for lower doses.
