    Close valve, cover the filter support ridges with water, place the metal filter, drain base, insert barrel, close valve, add and level coffee, place dispersion cap, tare. Pour 100g at 94-95°C and WWDT aggressively.

    Open the valve to 12 o'clock.

    Pour to 160g. Slight swirl.

    Drawdown around 2:15–2:30. Remove the brewer, tare and add 180g water to dilute.

Notes

Works well for easier-extracting coffees. Dilution water is best at 85 GH / 20 KH. Expect a finished extraction yield of 21.5–22.5%.

250–275 µm burr gap (EG-1). Use a metal filter, preferably.
