12s Slow Valve: ClosedClose valve, place dry filter, insert barrel, close valve, add coffee and level the bed, place dispersion cap, tare. Pour 100g with gentle, minimal WWDT.

325g
30s Slow Valve: OpenOpen the valve and slowly pour to 325g. Close the valve just as you start to see grounds at the water level — a very soupy puck.

Drawdown around 3:30–4:00.
