    Bloom

    Pour 130g of water over grounds to bloom. Watch the coffee bed rise as CO2 releases.

  2. 0:40
    Pour

    Pour steadily in the center of the bed until reaching 400g.

    Pour

    Continue pouring in the center until reaching 875g total.

    Done

    Drawdown complete. Remove filter when flow breaks into drips.

Notes

Use water just off boil. Position filter with three layers facing the spout. Center pours only — no circular motions needed. Simple two-stage method after bloom.
