Anaerobic
Open in appTomoya Tsujii's four-pour schedule on the RAN, brewed with an anaerobic Rwanda from Rulindo. He grinds a click coarser than his usual setting for this lot and takes the water a touch below his normal temperature — the ferment brings enough intensity on its own, and the job here is to keep it from turning sharp. It is the longest of his RAN builds and also the fastest to finish.

Notes
Grinder
22 clicks (Comandante C40) — one coarser than the 21 he usually reaches for. He gives the equivalents himself: 19 on a Timemore C2, 15 on a C3, about 5.1 on an S3.
