Sweet Spin
Open in appTomoya Tsujii's house schedule on the Alpha, brewed here with a washed Kenya AA. Four pours, a small first one, and a hard swirl on each of the early ones — the swirl is the point, and what he credits for the sweetness. He picked this dripper for the coffee on purpose: chaffy Kenyans and Ethiopians tend to choke a standard V60 late in the brew, and the Alpha holds the same drain speed to the last drop.
