    Pour

    Add 18g of coffee and pour 270g of water at 96°C.

    Swirl

    Bloom 30s, then mix manually and let the coffee fall flat. Pull up to engage the claw and tap gently to settle the bed.

    Wait

    Let it steep quietly.

  4. 2:30 04
    Wait

    Begin a slow, concentric pull for roughly 30 seconds.

  5. 3:00 05
    Done

    Serve.
