    Add 22g of coffee and pour 320g of water at 88°C.

    Swirl

    Slowly agitate with the claw 3-4 times.

    Wait

    Allow immersion for five minutes.

    Wait

    Pull up slowly to finish.

    Done

    Serve.

Notes

The Perfect Loaf, Albuquerque. The longer steep pulls more body without losing clarity.
