    Pour

    Inverted: add coffee, then pour 70g of 85°C water.

    To 70g 5s Slow
  2. 0:05 02
    Stir

    Stir 20 times.

  3. 0:30 03
    Pour

    Pour 100g more (total 170g).

    To 170g 10s Slow
  4. 0:40 04
    Wait

    Cap with the wet double filter and flip onto the cup.

  5. 0:45 05
    Press

    Press slowly until 1:50.

  6. 1:50 06
    Done

    Add 75g of hot water and serve.

Notes

Original dose was 28g coarse plus 1.5g ultra-fine; round to 29g total. Cap with two paper filters, wet. Final dilution: 75g of hot water after the press.
