Before you brew

  1. 1 Set a paper filter in the basket.
  2. 2 Rinse the filter.
  3. 3 Add 20g of grounds.

Notes

The water is cold, not iced, and it goes in from a gooseneck like any other brew. Nothing is chilled afterwards. Let the first pour sit for the full thirty seconds before starting the second — with cold water the bed wets slowly, and that pause is not decorative. After the last pour it takes 90 to 120 seconds to run through. Lift the brewer off at about three minutes; roughly 160g lands in the cup.

Grinder

Extra fine, well below what any pour-over asks for. It is the only thing doing the work that an eight-hour steep normally does.
