Notes

Set up before you start: cover the filter support ridges with water, place the filter, open the valve to drain the base, insert the barrel, add and level the coffee, place the dispersion cap and tare. Close the valve for the steep, then open it to drain; close it again when the slurry is just wet. Target an extraction yield of 19–20%. Discard the last 5g of weak runoff for a cleaner cup.
