    Close valve, place dry filter, insert barrel, close valve, add coffee and level the bed, place dispersion cap, tare. Pour 100g with gentle, minimal WWDT.

    Open the valve and slowly pour to 325g. Close the valve just as you start to see grounds at the water level — a very soupy puck.

    Drawdown around 3:30–4:00.

Notes

Use water at 93°C for lighter roasts, a touch cooler for medium. High sweetness, big body, medium acidity and clarity.
