    Bloom

    Close valve. Pour 100g slowly, then stir.

    To 100g 10s Slow
  2. 1:00 02
    Pour

    Pour slowly to 300g with valve closed.

    To 300g 30s Slow
  3. 3:00 03
    Pour

    Pour to 500g slowly. Open valve to begin percolation.

    To 500g 25s Slow
  4. 7:00 04
    Done

    Full immersion start with percolation finish.

Notes

Boiling water with closed valve creates immersion phase. Opening the valve transitions to percolation for a clean finish. Best of both worlds.
