    Pour

    Pour 100g of water at 90°C. Stir gently with a spoon to remove air pockets.

    Pour

    Pour remaining 130g of water for 230g total. Stir once more gently. Place lid on.

    Wait

    Place the Clever Dripper on your mug. Valve opens automatically and coffee drains.

    Drawdown complete. Clean, sweet Japanese-style brew.

Notes

Recipe from Hitsuji Coffee, Japan. Pour in two stages with gentle stirring. The 90°C water temperature is notably lower than Western recipes, typical of Japanese specialty preparation which favors sweetness and reduced bitterness. Uses a 102 fan-shaped paper filter. Avoid touching the paper filter when stirring as it can clog.
