The Clever Dripper (made by Taiwanese brand Mr. Clever) is a hybrid brewer that combines full immersion with paper filtration. Coffee and water steep together inside the dripper with a sealed base. When the dripper is placed on a mug or server, a valve opens and the brewed coffee drains through the paper filter. This gives you the predictability of full immersion with the clean cup of paper-filtered pour-over.
How the Clever brews
The valve mechanism is a soft silicone ring that sits against the bottom drain. It stays sealed by its own weight until the dripper is placed on a cup, which physically pushes the valve up and lets the brew flow. Because the coffee steeps at even contact with the water (like a French press), extraction is more uniform than in pour-over. Because the paper filter catches fines and oils, the cup is clean (like a V60). The result: easy technique, clean cup, predictable extraction — at the cost of slightly less clarity than a well-executed pour-over.
The Clever is often recommended as the best single brewer for beginners or for anyone prioritising consistency over peak clarity.
Sizes in this family
- Clever Dripper L — large, 15-25 g dose, for mugs up to 500 mL.
- Clever Dripper S — small, 8-15 g dose, for cups up to 300 mL.
Both accept standard Melitta #4 (L) or #2 (S) paper filters — widely available and inexpensive.
What Clever recipes in this collection share
Clever recipes are simple: add grounds, add water, steep, release. Most variation happens in steep time (2 to 8 minutes) and whether water is added in one pour or staged. Recipes in this collection include James Hoffmann's Clever method, Scott Rao's adaptations, and short-steep speciality recipes. Typical parameter ranges:
- Ratio: 1:14 to 1:17
- Water temperature: 92 to 96 °C
- Grind: medium to medium-coarse
- Total brew time: 2:00 to 8:00
Use the Clever when you want immersion predictability with paper-filter clarity, when teaching someone to brew specialty coffee, or when you want a forgiving device that accepts a wide range of grind sizes.
