    Pour

    Upright with the cotton-plus-linen filter cap. Pour 100g of 93°C water.

    To 100g 10s Slow

    Stir

    Stir 15 rounds.

    Wait

    Insert the plunger and pull back slightly to create a vacuum. Soak for 45 seconds.

    Press

    Press for 5 seconds, then pull the plunger out.

  5. 1:25 05
    Pour

    Pour 135g of 75°C water (total 235g).

    To 235g 5s Slow
  6. 1:30 06
    Stir

    Stir 5 times.

  7. 1:35 07
    Wait

    Insert the plunger again, pull back to create a second vacuum and soak until 1:40.

    Press

    Press down at a constant speed.

    Done

    Serve.

Notes

Cap with one cotton filter and one linen filter, cut and stacked. Two pours at different temperatures: 100g at 93°C, then 135g at 75°C. The plunger is pulled slightly twice to create vacuum-soak phases before the final press.
