Method

    Pour

    Inverted with the plunger about 1 cm in: add coffee, then pour 100g of 100°C water and stir quickly.

    To 100g 5s Slow

    Pour

    Pour another 100g (total 200g).

    To 200g 5s Slow

    Wait

    Cap with the rinsed paper filter and flip carefully onto the cup.

    Press

    Slow plunge over 25 seconds, until you hear the air.

  5. 1:20 05
    Done

    Pull the plunger back to invert it briefly, then serve.

Notes

Pre-rinse the paper filter and run a blind press of boiling water through the cap to preheat. Use freshly boiled water — re-boil if it's been sitting. Cap with a single rinsed paper filter.
