    Inverted: add coffee, then pour 70g of water.

    To 70g 10s Circular

    Swirl

    Swirl for about 15 seconds.

    Pour

    Pour the remaining 160g of water (total 230g).

    To 230g 10s Slow
  4. 1:00 04
    Wait

    Cap with the double rinsed filter.

  5. 1:20 05
    Wait

    Flip onto the cup.

  6. 1:30 06
    Press

    Press over about 15 seconds.

  7. 1:45 07
    Done

    Brew complete (~1:45 total).

Notes

Double-rinsed paper filters. Low 81°C water keeps bitterness in check and lets the fruit lead. Press lasts about 15 seconds after the flip.

Grinder

Medium — about 6.5 on an EK43.
