    Pour

    Inverted: add coffee, then pour 45g of 85°C water over 10 seconds.

    Stir

    Stir gently — three times back-and-forth, three times left-and-right.

    Pour

    Pour the remaining 140g of 81°C water (total 185g).

    To 185g 15s Slow

    Wait

    Cap and wait until 1:30.

    Wait

    Flip onto the cup.

  6. 1:40 06
    Press

    Press over 30 seconds.

  7. 2:10 07
    Done

    Aerate before serving (~2:15 total).

Notes

Two paper filters, rinsed. Pour temperatures step down: 45g at 85°C, then 140g at 81°C. Aerate the coffee by swirling or pouring between two jugs just before serving.
